Chef Corey Pickens is one who not only serves with excellence, but he’s astounding at his job. So we decided to sit down with him to see where his passion comes from, why he loves cooking, and how he came to be a chef.
One of my favorite parts of this interview is when he talks about his favorite meal of the day because you get a glimpse of his heart mingled with his passion. Also, it was interesting to read how his cousin inspired him at a young age. And, of course, the return of comfort food.

When did you decide to become a chef?
CHEF COREY: When I was about 12 years old, my favorite cousin, who had just graduated from culinary school, came over and cooked an amazing meal for our family; it left a big impression on me because I looked up to him.
How long have you been with Stonewall Resort?
CHEF COREY: I have been with Stonewall Resort for 19 wonderful years.
What is your signature dish? What do people love about it?
I would have to say that my signature dish is the big breakfasts that I make for my family. There is just something special about cooking and sharing that first meal of the day with those you love most. And who doesn’t love breakfast?!

What are your favorite flavors of spring? Why?
When the weather warms up, I typically start thinking about lighter fare. I always try to incorporate a lot of fresh fruits and vegetables into my dishes. And of course, morel mushrooms and ramps!
When it comes to hosting group events at Stonewall Resort, what sort of healthy food choices does your team offer?
Our sales and culinary teams work with each group individually to best meet their culinary wants and dietary needs. One of our recent options, for example, sous vide, grilled cauliflower steak with pickled vegetables, capers, and olives. That is one of the most popular vegan options that we offer.
Tell us about upcoming culinary trends that you’re excited about:
I believe that people are trying to get back to the simple things in life. Comfort foods like chicken and dumplings, mac and cheese, creamy risotto, and bacon-wrapped meatloaf are timeless. Here at Stonewall, we also strive to make things healthier in our fare. Using fresh herbs and spices instead of fats, and that simple effort makes a huge difference in the flavor of even the simplest of dishes like, say, sauteed mushrooms and spinach.
